Chicken/Seafood Spanish Paella

If you do not like seafood try this with Chicken only.
CHICKEN & SEAFOOD PAELLA
SERVES 4-6 – MILD
Shopping List:
500 Grams black mussels – scrubbed
¼ cup olive oil
600 grams chicken thigh fillets- halved
1 large onion – chopped
3 large ripe tomatoes-seeded & chopped
1 small red capsicum – diced
1 small green capsicum – diced
1 lite vegetable stock
1 1/3 cups rice – uncooked
12 green medium prawns – peeled – leave tails on
1 cup frozen peas
¼ cup dry sherry or wine
½ fresh parsley – chopped
1 lemon – cut into wedges
Method:
- Heat 2 tablespoons oil in large frying pan
- Add chicken pieces – cook until brown – about 5 mins – remove from pan
- Add remaining oil – cook onion & tomatoes – gently until soft
- Add capsicum – cook for 1 min
- Stir in the spice blend - Stir in rice & chicken
- Add stock – bring to the boil – reduce heat – simmer uncovered for 10 mins
- Stir in prawns, peas, sherry & mussels
- Cover pan – cook 3-5 mins until mussels open – discard any which do not open
- Stir in parsley - Serve with lemon wedges
