Chorizo & Lentil Soup - Mediterranean

This is a hearty mild Mediterranean soup. This can be made hotter with the use of a hotter Chorizo sausage.  You can also use Italian sausages or smoked ham hock works well.

1 kg Chorizo Sausage
1 Onion

1 Large Carrot
1 cup brown lentils Brown Lentils
1 x 400 gram Tin Chopped Tomatoes
1 Tablespoon Olive Oil

1 Litre Chicken  or vegetale stock
1 Litre Water
2 Tablespoons Parsley

oregano smoked paprika pepper
