Bombay Lamb Curry - This is a delicious mild Indian curry traditionally made with Lamb.
It can be made with different cuts of lamb, especially good as a rub on a lamb roast. You could also substitute chicken or vegetables for the lamb.
Ingredient
1 Kg Lamb (Cubed)
1 Tablespoon Oil
2 Medium Onions (chopped)
410 Gram Can Tomatoes (Chopped )
1 Cup Coconut Milk
1 tablespoon sugar (optional)
Fresh Coriander Leaves – to Garnish – Optional
Method:
□ Heat Oil in Pan – Add Onions & Cook until Soft
□ Add Spice Blend
□ Add Meat - Stir Well to Coat & seal meat
□ Add sugar (optional) this will sweeten the dish
□ Add Chopped Tomatoes – Stir well – Simmer Covered for 1 1/2 Hours
□ Add Coconut Milk – Simmer for 5-10 minutes – till Sauce Thickens Slightly
SANDY’S TIP: Serve with Rice – Sprinkle Coriander Leaves Over Curry
Slow Cooker Method: When using a slow cooker, follow the usual method, transferring the meat, onions & spice blend to cooker when mixed. Then add chopped tomatoes, mix well. Coconut milk should not be added till near the end of cooking time. So best to judge then, how much coconut milk you will require, depending on how saucy you would like the dish. Cook on low setting for 6-8 hours. Sprinkle with Coriander leaves to serve.
